Aroma:
Intense smell of tomato vine leaves and stalks with sweet tomato coulis, mixed culinary
herbs, Romaine lettuce, kale and a touch of bitter nuts all give complexity to the attractive
aromas
Taste:
The taste in the mouth is similar to the aromas with plenty of tomato vines and mixed salad
leaves with rocket, mustard leaves and a strong culinary herbaceous topping of oregano and
wild marjoram. Strong peppery notes fill the mouth with almond skins and tea tannins
adding bitter tones to the mix all balanced by the deeply herbaceous tones that follow on and
linger into the deliciously long after taste.
Style:
This is a robust but by no means harsh oil that has all the complexity and balance that are to
be found in a really first-class oil.
Assessment:
This magnificent oil is an excellent choice for enhancing sauces, pasta dishes and soups as
well as for mixing and matching with other well flavoured ingredients such as barbecued
grills and strong leafy salads and for dipping with vegetable cruditees.
